  • 2 tablespoons rice vinegar
  • 1 tablespoon hoisin sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon sesame oil
  • 2 teaspoons cornstarch
  • ¼ cup chicken broth
For the Stir-Fry
  • 2 tablespoons vegetable oil
  • 1 medium zucchini sliced
  • 1 red bell pepper diced
  • ½ onion chopped into large pieces
  • 4 garlic cloves minced
  • 1 teaspoon grated fresh ginger
  • 8 –10 dried red chili peppers
  • ½ cup roasted unsalted peanuts
  • 2 green onions sliced

Step 1: Marinate the Chicken
  1. In a medium bowl, combine the chicken pieces with soy sauce, cornstarch, and vegetable oil. Toss until every piece is evenly coated.
