Step 1: Prepare the Oven and Baking Tray

Step 2: Make the Caramel Mixture
- In a saucepan, combine the sugar, honey, butter, and cream. Heat gently while stirring until the butter melts and the mixture becomes smooth and slightly bubbly.

Step 3: Add the Dry Ingredients
- Remove the saucepan from the heat and stir in the flour, almonds, pistachios, candied orange peel, vanilla extract, and salt. Mix thoroughly until all ingredients are evenly coated.

Step 4: Shape and Bake

Step 5: Cool Completely
- Allow the Florentines to cool on the baking sheet for several minutes before transferring them to a wire rack. They will become crisp as they cool.

Step 6: Add the Chocolate
- Spread melted dark chocolate over the flat side of each cooled Florentine. For a traditional finish, create decorative wavy lines in the chocolate using a fork and allow it to set completely before serving.
